Build Your Own Greek Bowls

Easy, Customizable, and Weeknight-Approved

These Greek Bowls are inspired by one of our favorite fast-casual spots here in Columbus—Brassica (if you know, you know). We wanted to recreate the same bold flavors and build-your-own flexibility at home, and now this combo is a staple in our kitchen.

We love these bowls because they’re easy to adjust with whatever’s in season, make the best leftovers, and work for a variety of eating styles. You can keep it vegetarian, load it with roasted veggies, or add shredded chicken for extra protein.

Ingredients

🌿 Base:

  • 1 cup cooked orzo

  • 1/4 cup Primal Kitchen Greek dressing

  • 1/4 cup crumbled feta cheese

(Tip: Mix the dressing and feta directly into the warm orzo for even more flavor.)

🥦 Roasted Veggies:

Toss with olive oil, Greek Freak seasoning (we use Spiceology brand), salt, pepper, and garlic. Roast at 425°F for about 25–30 minutes or until golden and crisp around the edges:

  • Cauliflower florets

  • Chickpeas

  • Bell peppers

  • Carrots

🥒 Fresh Toppings:

  • Chopped cucumbers

  • Quartered cherry tomatoes

  • Sun-dried tomatoes

  • Peppericinis

  • Chopped dates (optional but highly recommended)

  • Shredded chicken – or leave it out for a vegetarian version

🥄 To Serve:

  • A big spoonful of hummus

  • Extra Greek dressing or a drizzle of Greek yogurt

  • A little balsamic glaze (trust me—this takes it over the top!)

  • Pita or naan bread

Why We Love It

These bowls are like a choose-your-own-adventure dinner. Everyone gets to build their own with what they like (great for kids and picky eaters), and you can change it up week to week depending on what’s in your fridge or what’s fresh at the farmers market.

It’s our go-to when we want something healthy, hearty, and fast—but still crave-worthy.
