A Fresh Take on Mom’s Springtime Pasta Salad
This salad takes me right back to my mom’s kitchen. She was always clipping recipes from Taste of Home and Better Homes and Gardens, and her recipe box was packed with worn-out pages, scribbled notes, and dressing stains — the good kind of messy. In fact, I think she still has this one somewhere in the box?
Her pasta salad was one of my ( and my sisters’ ) favorites growing up. It was on repeat for our company or to bring to gatherings in the spring and summer.
I’ve given it a little update with Brami pasta, crisp spring veggies, and a light lemon dressing. It’s still full of flavor and comfort, just a little fresher.
One of the best things about this salad is how versatile it is. It’s packed with spring produce like snap peas, fresh spinach, and crunchy celery, but you can easily swap in whatever veggies are fresh and in season.
This salad is easy, fresh, and full of crunch with juicy grapes and tender chicken. Perfect for quick lunches, picnics, or a simple dinner.
What you need:
Brami pasta (or any pasta you like), cooked and cooled
Cooked chicken, chopped
Grapes, halved
Snap peas, chopped
Spinach, chopped
Celery or green onion, sliced
Lemon dressing:
Lemon juice
Olive oil
Dijon mustard
A touch of honey (optional)
Salt & pepper
How to make it:
Mix everything in a big bowl.
Whisk the dressing ingredients, pour it on, and toss well.
Chill a bit if you can, or eat right away.
