Pb and J Energy Balls
These PB & J energy balls are like a childhood favorite—rolled up into a quick, healthy snack. Naturally sweet, full of feel-good ingredients, and super easy to make with pantry staples. Perfect for lunchboxes, busy afternoons, or a sweet little gift!
1/2 cup peanut butter
1 cup oats
1/4 cup honey ( or maple syrup)
1/4 cup jelly (any flavor you prefer, but strawberry or grape works well)
2 tablespoons hemp seeds (you can add more for extra protein and crunch if you like)
Instructions:
In a bowl, mix the oats, peanut butter, honey, jelly, and hemp seeds until well combined.
If the mixture is too sticky, add more oats, 1 tablespoon at a time, until it’s easier to handle. If it’s too dry, add a little more peanut butter or honey to moisten it.
Roll the mixture into bite-sized balls (about 1 inch).
Refrigerate for about 30 minutes to firm them up.
