Pumpkin Spice Energy Balls
It’s pumpkin spice season, so naturally I’m finding ways to sneak it into anything. 😂
These Pumpkin Spice Energy Balls are one of those recipes I love having in the fridge or freezer because they take about 5 minutes to throw together and make an easy grab-and-go snack. No baking or complicated ingredients, and they’re especially good when you need something quick between all the things.
They’re also a great way to use up that leftover pumpkin sitting in the fridge after making something else.
I like these as an afternoon snack, something to grab before heading out the door, or a great sweet treat for a kid lunch box The oats and hemp seeds give them some staying power, while the peanut butter and maple syrup keep them just sweet enough.
Ingredients
2 cups oats
1/2 cup pumpkin puree
1/3 cup peanut butter
1/4 cup maple syrup
1/4 cup hemp seeds
1 tsp pumpkin pie spice
1 tsp cinnamon
Directions
Add everything to a bowl and mix until well combined.
If the mixture feels a little too wet, let it sit for a few minutes so the oats can absorb some of the moisture.
Roll into balls. I usually make them about 1–1 1/2 inches.
Store in the fridge and grab one whenever you need a quick snack.
A few notes:
You can easily swap almond butter for peanut butter if that’s what you have. And if your kids are suspicious of anything labeled “pumpkin,” you can always just call them energy balls and keep the pumpkin part to yourself. 😉
