Sweet & Salty Pretzel Bars

Long before “clean eating” was trendy, my mom stumbled across a recipe for homemade snack bars—and we were hooked. They became a permanent fixture in the freezer, especially when I was home from college.

Fast forward a few years (okay, more than a few), and I’ve got four kids of my own asking for “a little something” after dinner. Instead of reaching for the candy drawer, I keep a stash of these Sweet & Salty Pretzel Bars in the freezer. They’re a twist on my mom’s original recipe—just as easy, but with a little extra crunch and a chocolatey kick.

They come together fast with pantry basics and no baking required. I press the mix into a pan, freeze it, and cut them into bars. When the kids ask for dessert, I pop one out, break it into a bowl, and boom—treat handled.

Ingredients:

  • 2/3 cup peanut butter

  • ¼ cup melted coconut oil

  • ¼ cup honey

  • Dash of cinnamon

  • 2 cups rolled oats

  • 1 cup crushed pretzels

  • 1 cup chocolate chips

How to Make Them:

  1. In a small saucepan over low heat, melt the peanut butter, coconut oil, and honey together, stirring until smooth. Remove from heat and stir in the cinnamon.

  2. In a large bowl, mix the oats and crushed pretzels.

  3. Pour the warm peanut butter mixture over the dry ingredients and stir until well coated.

  4. Let it cool a few minutes, then fold in the chocolate chips (so they don’t totally melt).

  5. Press everything firmly into a parchment-lined 8x8 or 9x9 pan.

  6. Freeze until firm—about 1–2 hours. Cut into bars and store in a freezer-safe container.

A Few Tips:

  • They’re best straight from the freezer—cold, crunchy, and totally satisfying.

  • You can swap peanut butter for almond butter or sunflower seed butter.

  • Feel free to toss in chopped nuts, seeds, even a handful of dried fruit or leftover chocolate candies if that’s your thing.
