How I Roast Whole Sweet Potatoes (The Lazy-Genius Way)
I roast mine whole, skin-on, in a Dutch oven. Here's how:
Give them a quick scrub, then rub each one with olive oil and sea salt.
Place them in a covered Dutch oven and roast at 425°F for about 90 minutes. Yep, it’s a long roast—but the payoff is ultra-soft, caramelized, and slightly crisp-skinned potatoes.
Pro tip: This method works best when you’re actually home for a stretch. Not a last-minute dinner move, but great for slow weekend meal prep or afternoons when you're around the house.

BBQ Chicken Stuffed Sweet Potatoes: The Non-Recipe
Once you’ve got your sweet potatoes roasted, it’s easy from there:
Open up a potato and give it a gentle fluff
Top with cooked chicken (rotisserie, grilled, leftover, whatever you’ve got), chopped and tossed in your favorite BBQ sauce.
Add a side of roasted veggies or a quick slaw
Optional: top with a dollop of plain Greek yogurt, a sprinkle of cheddar, some chopped green onion, avocado or all of the above.
