Beef and Veggie Taco Bowls

Taco night…but not tacos.

I made this the other night when I wanted something easy, filling, and to use up the ground beef thawing . It’s basically all the good parts of taco night served over rice — seasoned ground beef, zucchini, corn, tomatoes, guacamole, cheese and hot sauce.

And honestly, I think I like this version better.

The part that makes this a great weeknight dinner is that you can do the beef, zucchini and corn mixture ahead of time.Make it earlier in the day, pop it in the fridge, and when dinner rolls around you just need to make the rice, chop the tomatoes and pull out the toppings.

Dinner = done.

Why I like this one

I love a dinner where I can prep a few things ahead and then just assemble when we're ready to eat.

And this one is really easy to customize.

If you have kids who don't want everything mixed together, keep the rice, beef mixture, tomatoes and toppings separate and let everyone build their own bowl.

Want it spicy? Add hot sauce or salsa.

Want it mild? Keep the beef mixture mild and let everyone add their own heat.

Don't have all the toppings? No big deal. Use what you have.

That's kind of how I cook anyway — I don't need a recipe that requires me to have 14 ingredients on hand. I want a good base that I can make work with what I've got.

What you need

  • 1 lb ground beef

  • 1 zucchini, chopped

  • 1 cup corn

  • Mild enchilada sauce ( I use Somos Mild Enchilda Sauce)

  • Rice

  • Cherry tomatoes, chopped

  • Guacamole

  • Shredded cheese

  • Salsa and/or hot sauce

How to make it

Brown the ground beef in a large skillet. Add the chopped zucchini and cook until it starts to soften.

Add the corn and enchilada sauce and stir everything together. Let it cook for a few minutes so all the flavors come together.

That's your make-ahead part.

When you're ready for dinner, make your rice, chop your tomatoes and get your toppings ready.

Then just build your bowl: rice + beef/zucchini/corn mixture + tomatoes + guacamole + cheese + whatever amount of hot sauce or salsa you like.

If you’re feeling extra sprinkle some fresh cilantro on the top.

Easy.

And a little different from your usual taco night.
