Simple Broccoli Salad with a Sweet and Savory Kick

This broccoli salad is crunchy, sweet, and super easy to throw together. The dressing has a fun little twist with coconut aminos and Korean BBQ sauce. The best part? It actually gets better as it sits. Letting it chill in the fridge for a bit gives the broccoli time to soak up all that flavor, making it a great make-ahead option that saves you time and stress.

Ingredients:

  • 1 head broccoli, chopped into small bite-sized pieces

  • 1/4 cup green onion, diced

  • 1/4 cup peanuts

  • 1/4 cup golden raisins

Optional variations:

  • Shredded carrots

  • Sliced almonds

  • Purple cabbage, thinly sliced

Dressing:

  • 1/4 cup coconut aminos

  • 2 tbsp almond butter

  • 2 tbsp rice wine vinegar or juice of 1 lime

  • 2 tbsp Korean BBQ sauce (we like the Bachan brand)

Instructions:

  1. In a large bowl, combine the chopped broccoli, diced green onion, peanuts, golden raisins, and any optional add-ins you like such as shredded carrots, sliced almonds, or purple cabbage.

  2. In a small bowl, whisk together the coconut aminos, almond butter, rice wine vinegar (or lime juice), and Korean BBQ sauce until smooth and well combined.

  3. Pour the dressing over the broccoli mixture and toss gently to coat everything evenly.

  4. Let the salad sit for about 10-15 minutes before serving to allow the flavors to meld together.

  5. Serve as a refreshing side or light lunch!
