Sometimes dinner doesn’t need to be complicated — it just needs a little upgrade. One of the simplest skills that can completely change your dinner game? Learning how to fold a burrito. Once you know how to wrap it up tight (so nothing falls out the bottom 🙌), even basic ingredients suddenly feel like something you’d order at your favorite burrito spot.
Here’s one of my go-to burrito combos that gets a big thumbs up from the whole family:
How to Make:
Ingredients
1 lb ground beef, cooked and seasoned with brisket seasoning, garlic, salt + pepper
ÂĽ cup Primal Kitchen Italian dressing (for an extra boost of flavor)
1 cup cooked rice, seasoned with chopped cilantro, 2 tbsp rice wine vinegar, salt + pepper ( this little extra makes a difference in flavor boost)
Shortcut: Seeds of Change pre-cooked rice packets work perfectly here!
Fresh red bell pepper slices
Avocado slices
Burrito-size tortillas
Optional dip: plain Greek yogurt (a lighter stand-in for sour cream)
How to Build It
Warm your tortilla until soft and flexible (this helps avoid tearing).
Layer rice, beef, peppers, and avocado down the center. Don’t overfill — less is more when it comes to folding.
Fold in the sides first, then roll tightly from the bottom up, tucking as you go.
Slice in half and serve with a side of Greek yogurt for dipping.
Prep Tip:
Here’s where you can save yourself some serious stress: cook and season the beef earlier in the day (or even the night before). Store it in the fridge, and when dinner rolls around, all that’s left is warming it up and assembling. ( I am all about the prepped protein!)
